Ton-y-Botel ('Ebenezer,' 'Saint Patrick's Breastplate'), but only when played by an organist with brass :::ahem::: stops -- this one used to give me goosebumps. The fact that this tune is so often played like a dirge is roughly half the reason I decided to learn to play organ.
Aberystwyth (the choir I sang with as a kid always did 'Watchman Tell Us of the Night' to this tune -- much better, IMO, than the plodding Mason version)

...I guess it would also be reasonable simply to write "insert all the classics from Lessons and Carols here," since I have always loved singing those.
As a kid I was also fond of pretty much anything that employed dashing imagery of fiery angels, triumphant battles with death, and the like, especially when there were minor keys involved, and while I'm pretty sure I'd still enjoy them, I can't remember all the titles. Drat.
